Great Granola

This recipe is low-calorie, low-fat, healthy and delicious. The most difficult part is dicing the fruit! Yield: 6 cups (serving size: 1/4 cup) 4 cups regular oats 1/4 cup slivered almonds 1 1/2 teaspoons ground cinnamon 1/4 teaspoon salt 1 tablespoon ground flax seed meal 1/3 cup water 1/3 cup honey 1/3 cup lite maple syrup 2 tablespoons brown sugar 2 tablespoons canola oil Cooking spray 1 cup minced dried apricots or 1 dried cranberries Preheat oven to 325°. Combine water, honey, syrup, sugar, and oil in a small saucepan; bring to a boil. Mix together the oats, almonds cinnamon, salt and flax in a large bowl. Pour over liquid mixture over the oat mixture; toss to coat. Spread oat mixture on a cookie sheet coated with cooking spray. Bake at 325° for 35 minutes or until golden, stirring every 10 minutes. Place in a large bowl; stir in apricots or raisins. Cool completely.
