Potato Chip Chicken

This is one of my children's favorite recipes. They would invite friends over for supper because they loved the idea of eating potato chips for dinner. Any cut of chicken can be used, bone in or bone out. The important ratio is chip to parmesan to amount of chicken.

2 1/2 cups crushed potato chips

1/4 cup parmesan cheese, grated

3 tablespoons butter

1 pound of chicken

Crush potato chips in a plastic bag by squeezing them with your hands. Leave them a little chunky, like the consistency of panko. Add the parmesan and mix. Place the chip mixture on a plate. Melt the butter in a bowl large enough to dip the chicken in. Roll the chicken in the melted butter then place it in the chip mixture. Coat it well by pressing the chips into the chicken. Lay down a piece of parchment on a cookie sheet and top it with a rack. Place the coated chicken on the rack and bake it at 350 degrees until done (165 degrees for breasts and 170 or 175 for legs).
