Panko Breaded Cod

3/4 pound of cod

1 lemon

1 egg, beaten with a teaspoon of water

1 cup Panko bread crumbs

1/4 cup shredded Parmesan cheese

1 tablespoon garlic powder

1 teaspoon onion powder

salt and pepper to taste

2 servings

Squeeze a little lemon over the fish. On a plate mix the Panko, Parmesan, garlic powder, onion powder, salt, and pepper. Mix egg with water on another plate. Roll the fish in the egg mixture and then in the Panko mixture. Spray both sides with cooking oil and place the fish on a baking rack on top of a cookie sheet in a preheated 400-degree oven. Bake for about 15 minutes and then check to see if the fish is done. Continue baking until the fish is flaky.
