Mediterranean Rice

This is a flavorful side dish that can accompany just about any main course. It can also serve as a vegetarian main dish.

1 cups water

1 cup chicken stock

1 cup brown jasmine rice

10 grape tomatoes cut into 4th

20 pitted kalamata olives slice in 3rds

1 teaspoon EVOO

1/2 cup feta

Boil water and chicken stock. Add rice when boiling. Bring to boil again. Once boiling, reduce to simmer for 30 to 40 minutes until rice is soft. While rice cooks, place tomatoes in a pan with the oil. Cook on medium heat until tomatoes become slightly browned. Add olives and feta to rice. Stir and serve.
