Baked Cod Fillets

2/3 pound cod - skinless

1/4 cup fennel sliced thin

1/4 cup red onion sliced thin

1 Roma tomato cut into pieces

juice from 1/2 lemon

1/2 teaspoon dried thyme

1/2 cup chicken broth

1/2 teaspoon lemon zest

panko

Serves 2

Preheat oven to 400 degrees. Spray cooking oil in a pan and saute fennel, red onion, and tomatoes on low until soft.

Add the thyme and cook for another minute. Add broth, lemon juice, and lemon zest stirring all together. Sprinkle cod with salt and pepper. Place cod in a pan and spread panko on top to cover the fish. Place thin slices of butter on every part to the fish then place the pan in the 400-degree oven. Bake it until fish flakes when you put a fork in it (about 10 minutes). Before serving whisk 1 tablespoon of butter into the sauce.
